Grain Free granola

Grain free granola recipe

This girl loves a good granola, but I wanted a healthier, less expensive recipe with lower carbs.  I was eating a grain-free granola from Wegmans but it was pricey, so I found several recipes on Pinterest and tweaked them to my taste.  This is super easy to make and everyone loves it by the handful or on yogurt.


Ingredients:

1 ½ C coarsely chopped pecans, almonds and walnuts

1 ½ C unsweetened shredded coconut

½ C raw pepitas (pumpkin seeds)

¼ C raw sunflower kernels

1 t cinnamon

¼ t salt

4-5 T honey (preferably local honey so you get all the health benefits)

1 t vanilla extract (I’ll share my recipe for homemade in another newsletter)

Mix the first 6 ingredients together in a big bowl. Add vanilla extract and honey and mix into the dry ingredients.  Evenly pour onto a cookie sheet and bake at 350 for about 15 minutes or just until the nuts and coconut start to turn golden brown.

Feel free to play around with this recipe. I’ve done more or less honey and also added raisins or small chocolate chips, as well as oats (which clearly no longer makes it grain free!)
