Easy Protein Balls

My family loves these protein balls! We are all very active and snacks are a necessity in a busy lifestyle. But we also try to eat a healthy diet. These two things do not often go hand and hand which can be a challenge.

It took me awhile to finalize this recipe. I tried several different ones I found on Pinterest and played around with the ingredients and the amounts until we got one we really liked. And voila!

These protein balls are so easy to just pop into your mouth when you are headed out the door. It’s hard to only eat one or two at a time.

Easy Healthy Snack Recipe - Protein Balls 

1 C unsweetened coconut

1 C oats

1 ½ C peanut butter (chunky or smooth)

2 T Chia seeds

½ mini chocolate chips or cocoa nibs

2 T local honey

2 T protein powder (optional)

Mix all ingredients together in a bowl until well blended and moist. 

Place bowl in refrigerator for at least 1 hour. 

Use your hands to roll the mixture into balls. 

Store in a covered container in the refrigerator.
